Garbanzo Bean Sandwich (Vegan)

INGREDIENTS
- 1 can of organic garbanzo beans (save the water from the can)
- 3 Tbs of the garbanzo bean water
- 2 large organic carrots chopped
- a hand full of spinach (kale can be used as well)
- 1 tsp of garlic powder
- 1/2 tbs lemon pepper
- 1 tsp Himalayan salt (sea salt can be used instead)
- 1 tsp paprika
- 1/4 cup of nutritional yeast
- 1/2 cup of gluten-free panko flakes
INSTRUCTIONS
- Preheat oven to 385. Add everything into to food processor except for nutritional yeast and panko flakes.
- Pulse until everything is well combined.
- Transfer to a glass bowl, add in remaining ingredients and mix with a wooden spoon till well combined.
*Makes about 6-8 patties depending on how big or small you make them. Oil pan or use parchment paper. Cook for 10 minutes on each side.
To assemble your sandwich: Your favorite vegan bread, vegan mayo, organic ketchup, 1 slice of vegan cheese, a couple of slices of avocado, and some spinach.
For the carrot “fries” You’ll need aquafaba (the water from a can of garbanzo beans), seasoning, and flaxseed “flour” (I used a coffee bean grinder to grinder the flaxseed to powder). Dip the carrot fries in the aquafaba and then the flaxseed flour mixture, let it dry for a bit and repeat. After they are nice and coated bake them at 385 for about 20 minutes or until fries are crispy.
