Vegan and Gluten-Free Potato Pancakes.
Suprise!!! It’s just a recipe!!
Ingredients
- 4 Red Potatoes, grated
- ½ of an Onion, grated
- ½ Cup Coconut flour
- 2 green onions, chopped
- 2 cloves garlic, minced
- 1 Teaspoon Salt
- ¼ Teaspoon Pepper
- 1/4 dried basil
- ¼ Teaspoon baking powder
- Light olive oil for cooking
Instructions
- Add everything to a large bowl and mix well.
- Add about 1 tablespoon of oil to a cast-iron skillet and put over medium-high heat. When hot, take a handful of the potato mixture and form into a loose patty. The mixture will be very wet and soft. Drop the patty directly into the hot skillet. Fry a couple of minutes until the bottom is golden brown, then flip and fry on the other side. Repeat with the remaining potato mixture until all the batter is used up, adding more oil to the skillet as needed. Drain the excess oil from the patties on paper a towel.
*As you can see I used ketchup on my pancakes, my kids had maple syrup on theirs which gave it a sweet and savory taste! These are also very delicious in a sandwich or a burger! Hope you enjoy this recipe.
