BBQ Pulled Jackfruit
Hey! it’s just the recipe without all the words before you get to the recipe!!
INGREDIENTS
- 1 can of jackfruit (purchased at Trader Joe’s). If you do not have a TJ’s in your area this is a great brand too
- Your favorite bbq sauce. I used about 1/4-1/2 a cup (the amount varies by the amount you prefer to use).
- 2 tbsp of olive oil.
- 1 tbsp paprika (I love paprika so you can adjust this to your taste).
- 1/2 tsp salt and pepper (I used Himalayan pink salt).
- 3 tbsp nutritional yeast.
- 1-2 tsp garlic salt.
- 3 tbsp maple syrup (helps with the sweetness if you are using spicy bbq sauce).
- 3 tbsp water (optional only if jackfruit gets dry while cooking).
INSTRUCTIONS
- Open a can of jackfruit and drain water, and pull the jackfruit apart.
- Put pulled jackfruit and olive oil on a skillet and cook for about 1 minute.
- Add all spices to a skillet and mix well, close the lid, and let it cook on medium heat for about 10 minutes (mixing occasionally).
- Add maple syrup and bbq sauce mix well, close the lid and let it cook on medium to low heat for about 20-30 minutes (depending on how tender you want your jackfruit, mix occasionally.
- Turn off heat mix and serve immediately. It is delicious hot or cold, but best served hot!
This recipe is good all on its own, but also very good in a sandwich or enjoyed with some sides like cole slaw or sauteed mushrooms, bell peppers, and onions.
Add some cashew cheese for extra deliciousness! (recipe for cashew cheese here)
